Prosciutto Wrapped Asparagus Bouquets
The fact that Thanksgiving is officially right around the corner truly terrifies me. But, no matter what — if you are also shocked at how quickly time flies, or if you’re just excited to be at the end of 2020 — I am here to help you prepare for whatever you plan to do for Thanksgiving this year! Considering this year’s Thanksgiving falls in the middle of a pandemic, I’m hoping we are all keeping the gatherings as small and responsible and lit AF as possible. Not to toot my own horn, but I have a lot of recipes that you could make for the special day, and these prosciutto wrapped asparagus bouquets are one of them. These are probably one of the easiest Thanksgiving dishes you could have the luxury to prepare. AND you don’t even *need* an oven to make them. You can use a counter toaster oven, convection oven or an air-fryer to make these, making them the perfect starter for any of you who may live in a small apartment or dorm, or for those of you who have no more oven real estate for the big day.

The particular air-fryer that I used for this recipe is the Ninja Dual Air-Fryer that has two different baskets so you can prepare two dishes at once. While we are on the subject of air fryers, I do want to clarify exactly what they do. Air fryers are essentially mini convection ovens, where hot air circulates around the food to cook it and build ultimate crispiness. You can make anything that you would traditionally bake in an oven in an air fryer, and you will have a faster cook time and evenly crisp/browned results.
If you don’t have prosciutto, you can sub out for bacon (yasssss), thinly sliced pancetta, or even salami if you want something a little funkier. If you can’t find asparagus, go for green beans instead. They will give the same crunchy texture with a lighter, less vegetal and intense flavor.

1lb. asparagus | |
6oz. prosciutto | |

Half a lemon (for juice and zest) | |

Air fryer (optional, this can be made in a toaster oven, convection oven or regular oven) See notes! | |
Directions
Trim the white ends off of the asparagus.
Cut each piece of asparagus in two halves of equal lengths, separating the head from the stem. Set aside.
Cut the prosciutto slices in half, lengthwise, yielding 2 long, thin strips from each slice. If your prosciutto is delicate and pulls apart easily, skip this step and just use the whole slice for the method. Every brand of prosciutto is different!)
Lay the prosciutto slice flat on a clean surface. Place 6-8 pieces of asparagus (4 pieces from the top and 4 pieces from the bottom) onto the prosciutto. Wrap the prosciutto tightly around the asparagus, sealing it by pressing the prosciutto tight so it sticks to itself. Repeat with all of the prosciutto and asparagus.
Drizzle each bouquet evenly with olive oil. Squeeze a small splash of lemon juice on top and season with a generous pinch of pepper. The prosciutto should be salty enough, but keep salt on hand to season with at the end of cooking if you would prefer more saltiness.
Place into the air fryer basket and air fry on 400 degrees for 6 minutes, until the prosciutto is crisp and the asparagus is bright green. Notes for convection oven, toaster oven or regular oven cook times and temps are in the notes below!
Plate with lemon slices and grate lemon zest on top to your taste. Enjoy immediately!
Notes
If using a convection oven or toaster oven, set it to 400 degrees and check on the bouquets at 6 minutes. Cook 1-2 minutes more if necessary. If using a traditional oven, cook for 8-10 minutes, until the prosciutto is crisp to your liking and the asparagus is bright green.
