Anyone else obsessed with Chickie’s & Pete’s crinkle fries with Old Bay and cheese sauce? It can’t be just me… I remember having them at a football game in high school and I’ve been in love ever since. So, I decided to give them a little self-made upgrade. Instead of just a cheesy sauce, we’re making a cheesy CRAB dip (because I feel like Old Bay and crab need to be together at all times.)

I know there’s currently a cream cheese shortage, and when I was shopping for this recipe I definitely saw empty shelves at the stores (truly devastating.) The only store that I found cream cheese at was actually Trader Joe’s! So definitely go there if you are having trouble finding cream cheese.

Can’t find lump crab meat (or just wanna explore some other options?) For something more affordable, go with canned crab meat or even cooked shrimp that’s finely chopped. For something more *bougie,* go for jumbo lump crab meat.

I’m keeping this blog post brief because I just went on a massive “why I love buffalo chicken dip” rant in my latest recipe for my buffalo chicken dip bites. This buffalo chicken dip is the *same* thing as the filling served in those bites! The one thing that’s different here is that the dip is actually easier to make because all you’re doing is mixing up the dip ingredients, then baking it with cheese and extra sauce.  No hassle, tons of flavor.

Serve this dip with crackers (I love to enjoy with Cheez-Its for an extra WOW factor,) tortilla chips, pita chips, baguette, crostini, pickles… the world is your oyster.

Am I the only person who looks forward to the Super Bowl more than I look forward to Valentines Day? This isn’t because I love football. I love the Super Bowl because I love football…. food. Cheese….meat….buffalo sauce on everything….more cheese…dips….fried things…. ahhhhhhh!!!! Sometimes (most of the time) I don’t even watch the Super Bowl! I will just watch whatever I want and enjoy football food because I know that’s what everyone else is doing. I feel like I’m part of this delicious food community on Super Bowl Sunday. Sure, maybe I’m weird, but we all are so don’t @ me!

There’s no question that Buffalo chicken dip is a quintessential Super Bowl food. It’s also just a damn good weekend snack for those cozy, lazy days in. But, in the spirit of the big game coming up, I had a buffalo chicken themed week and I’ve got some spicy, sexy recipes comin’ for you.

You can go two ways with this recipe. You can make it into a dip, or you can wrap the buffalo chicken dip in  crescent roll dough and make buffalo dip *~bites~*. Regardless, just make it. OK?

You know I love a baked brie moment and I’m back with another combo that is perfect for Fall. Over the summer, I created my balsamic berry brie for the 4th of July (which, let’s be real, tastes great year round.) In that recipe, I used a classic sheep’s milk brie, sliced it open and filled it with a berry medley and a pop of balsamic.

I also have a baked brie stuffing recipe for Thanksgiving that is UNREAL. But, I do understand that stuffing isn’t really an everyday kind of dish, so I decided to make a new, easy Fall/winter/holiday baked brie recipe for all of us to enjoy.

What is goat brie?

For this particular recipe, I’m switching it up with a goat brie, instead of the classic sheep’s milk brie. Goat brie has a similar buttery, nutty, mushroomy and grassy flavor to sheep’s milk brie or camembert, but it’s made with goat milk, so it tastes a bit more grassy and has a subtle tangy flavor. It also thins out immensely if its baked for too long, so you have to watch it carefully. This goat brie will be sliced open and stuffed with garlic, rosemary and thyme, then topped with some whole cranberry sauce for a pang of sweetness. The cranberry is optional, but if you’re a fan of cheese platters that come with a fruits or jams, you will love this. Goat brie typically comes in 6-6.5 oz servings, so it’s usually a smaller wheel. If you want to make this for a large group, go for 2 wheels of goat brie. On the other hand, you can skip the goat brie all together and go with a more traditional sheep’s milk brie or camembert as well. It will still taste amazing. I made this recipe with two different brands of triple creme goat brie and the brand didn’t affect the outcome.

Do you ever go to Chipotle and spend the extra $$ for a little container of queso, to finish it way too fast? Or, do you ever buy that pre-packaged nacho cheese or queso from the store and just wonder what life would be like if it was freshly made for you instead of packaged in a jar and served at room temp? I have nothing against packaged queso, nacho cheese or Chipotle’s queso. I just find myself in need of an easy, creamy, delicious queso dip that doesn’t take a long time to make and is still packed with flavor. Whenever I’m in the mood for a cheesy, creamy queso with chips, it’s usually on my lazy Sunday where I don’t even really want to cook (I cook everyday for work, so let’s be honest, my days off aren’t usually in the kitchen!) So, this is that effortlessly delicious queso recipe!

Before you make this, let’s talk about this queso! This recipe is a Tex-Mex inspired queso cheese dip, with a lot of creaminess and basic cheese combos (cheddar and Monterey Jack.) This is not an authentic Mexican queso fundido and a lot of the creamy queso dips that we enjoy in the USA aren’t authentic to Mexico at all. Queso fundido is usually made of Oaxaca, manchego and chihuahua cheeses (of course other Mexican cheeses can be used and I’m referring to dishes I’ve had the pleasure of trying!) that are typically served flaming hot and sizzling in a skillet (yum ) There’s no cream or milk involved in a queso fundido. On another note, queso blanco (also known as queso fresco) is a moist, soft white cheese. It’s often confused with a white queso dip! While we are on this cheese usage topic, Mexican cuisine also incorporates delicious mild, white cheeses such as cotija (one of my faves.) To put it simply, this dip isn’t a Mexican dish. It plays with Mexican flavors and is actually an Americanized starter. There’s nothing wrong with eating Americanized food! It’s just important we appreciate the cultures in which our fave foods come from!

This queso is for you if you like the following flavors or textures :

  • Cheesy!!!! (any kind, because you can add any cheese to this from mild to sharp)
  • Creamy (you can adjust thickness by adding more or less milk, but you have to love creaminess to vibe with this queso)
  • Sautéed bell pepper flavor and crunch
  • Onion vibes

For extra *cheese drama,* I topped the dip with extra cheese and broiled it for a golden brown finish. This adds a nice contrast in texture, a great canvas for toppings and of course is great for the gram, BUT you really don’t need to do this. If you don’t have a broiler, please don’t let that discourage you from making this recipe, which is mainly done on the stove top. Here are pictures of the broiled and not broiled versions so you know what you’re in for either way!

While the classic and obvious way to serve this queso is in a skillet with some tortilla chips (as pictured) you can also use it for other fun dishes:

Other ways to serve this queso dip:

  • Drizzle it on top of a steak, pork or chicken
  • Mix in some black beans and serve with rice
  • Put it on a taco
  • Spread it in a burrito tortilla before wrapping it up
  • Dip bell pepper slices into it
  • Crostinis or bread (it can be served kind of like a southwestern fondue)
  • Toss some cooked macaroni in here for mac n’ queso
  • Pour it onto scrambled eggs or hash browns for an epic brunch
  • Put it on a burger (omg)
  • Use it as a dip for your French fries or tater tots
  • Make a grilled cheese (duh)
