You know what I don’t love? Spending $15 on a bowl at Chipotle. You know what I DO love? …Chipotle. So, that’s why I decided to meal prep these bowls which are better than the Chipotle chicken bowls (in my humble opinion!) They’re better because you know every ingredient that goes into them and they taste just like the real thing! They are also great for heating up in a container and enjoying for lunch all week long because, yum.

I like these because they are a healthier option and gluten-free without sacrificing flavor. You can also customize them to your liking: for garnishing and topping, you can choose whatever you want and adjust to your taste, which we love. Preparing this dish took me around an hour, but it’s easy because it’s a sheet pan situation.

I saw these Parmesan potatoes when viral back in 2022 and they’ve been on my mind for quiiite some time. I don’t like jumping on viral food trends because honest to god, I feel like I’m copying other people if I jump on board (which I never want to do!) so I let it go. But then, I was sitting in our hotel in Osaka when we went to Japan and we ordered room service. We deviated from the usual Japanese food and I got a Caesar salad with French fries (elite combo) because I was craving some good classic American food. This got my wheels turning…wait a sec…. crispy potatoes…parmesan….crispy romaine?! Yes. This is it. This is the one. And then I arrived in the USA and decided to go for it. Huge fan of this recipe and I hope you guys are too!

Just like croutons and French fries, these potatoes can get soggy if they sit in a liquid for a long time. So my recommendation is to keep the potatoes and salad separate until it’s time to eat.

Also, can we have a moment to just celebrate that this is gluten-free friendly?!?!

Craving easy weeknight meal and tired of putting chicken breasts on your salad? Look no further than this! Super easy meatballs with Parmesan and balsamic, which are then glazed with balsamic and then thrown onto this easy as can be salad. The other day, I was craving Chinese food. Buuuuut I wanted something a little healthier than the cornstarch coated and fried chicken nubs that usually go into sweet and sour chicken. Soooo alas, this recipe was born! I’m not going to lie to you, when I was making this, I didn’t think it would be THIS good. Like yes, I thought it would be delicious. But I didn’t realize how much of a WOW dish this would be. It’s really the perfect dinner for an easy meal when you’re craving takeout vibes but want to get some omega-3’s up in here.

If salmon isn’t your jam, you can of course make this with any other protein of your choice. My fave suggestions? Cubed chicken breast, tofu or shrimp.

These chicken nuggets are….OUTRAGEOUS! In the best way. I really recommend brining your chicken overnight for maximum flavor and juiciness. You can also use chicken thighs here for even softer, more tender meat, but I like a good chicken breast nugget. You know what I love about this recipe? It’s gluten-free but you genuinely couldn’t tell. The cornflakes add a subtle sweetness and beautiful crunch to the coating of the chicken, and I think whether we’re gluten-free or not gluten-free, we can all appreciate a great crunch.

Not going to lie to you, I impulsively served this with honey mustard ranch. I just randomly decided “lets mix all this together because I have a bottle of ranch right next to me” but you don’t have to serve it with this! Ketchup, mustard, plain honey mustard, plain ranch or ketchup/mayo works great! Live your truth!

It’s Super Bowl week and I’m going ALL OUT! Yesterday I posted a Philly cheesesteak potato skin recipe (which you must make btw because they’re so delicious) and I randomly came up with this buffalo cheddar tot recipe to utilize the filling that was scooped out while making the potato skins. I honestly came up with this on the fly, I had no measurements in mind and really winged the whole thing. That being said, this is my attempt at putting together exact measurements for ease. Every potato is a different size, so you might have more or less “filling” than I had and you most likely will have to adjust these accordingly. For example, if the 2/3 cup of buffalo sauce makes your potato mixture too soft, you will have to add a little more cassava flour. Same thing vice versa – if the mixture seems too dry, feel free to add more buffalo sauce. Follow your instinct! It should not be too wet, and it should feel like a mashed potato ball with a slight bouncy starchy consistency. It should not be gluey and it should not be dry.

This recipe is gluten-free because I used cassava flour as my binder, but if you are not gluten intolerant and don’t want to buy cassava flour, feel free to use all purpose flour!

Not into traditional frying? You can spritz these with nonstick spray and air fry them for 15-20 minutes at 375 F.

You know, I love poke but *damn* it’s pricy! And not gonna lie…I do get nervous about where people are sourcing their fish from these days. So, I decided let’s make poke at home but with the good ol’ shrimp. For this bowl, we cook our shrimp and then toss it in a delicious spicy mayo. It’s then paired with edamame, cucumber, mango, avocado, scallions and of course, some sushi rice. I love this for meal prep — prep all the ingredients ahead of time and assemble. The shrimp will keep for up to 2 days in the fridge. It takes a a few minutes to cook the shrimp, so I recommend prepping everything else then just making that fresh right before serving, but to each his own! Enjoy!

When we order Thai food, we always get chicken satay and we alllllways wish we had 5x more chicken satay than we ordered. So, I decided to take matters into my own hands and make something very similar to that delicious chicken satay we get via our local Thai spots. I paired it with a creamy coconut rice, zingy quick pickled onions, fresh herbs and radishes for vegetal flavors and crunch. You can absolutely pair it with regular rice if you don’t want to make coconut rice and you also can skip the quick picked onions if they are too much of a nuisance! Finally, if you’re vegan, try this with tofu that’s marinated in the same sauce and cooked in a skillet. Enjoy!

Make ahead! You can 100% make these ahead of time for an easy assembly later on. Let the chicken and rice cool before storing in the fridge.

Honest to god, cream of broccoli soup slaps. It’s slightly earthy, sweet, creamy, aromatic, savory and also…its GOOD FOR YOU. I don’t know if you knew this but traditional cream of broccoli soup is not gluten-free due to using a roux (flour/butter) or veloute sauce (which starts with a roux) in the beginning of the cooking process for thickening process. For this recipe, I created a roux with gluten-free all purpose flour and I still used butter because butter is delicious. However, you can use the same weight of olive oil and still get thickening power from the flour.

Don’t have gluten-free flour? Use regular if you aren’t allergic! Or, you can use cassava flour, cornstarch or potato starch. If you use starch, use about 1 1/2 tsp and 2 1/2 tsp water. Make a slurry and add it (this reduces starchy/gummy clumps.)
