You know what I don’t love? Spending $15 on a bowl at Chipotle. You know what I DO love? …Chipotle. So, that’s why I decided to meal prep these bowls which are better than the Chipotle chicken bowls (in my humble opinion!) They’re better because you know every ingredient that goes into them and they taste just like the real thing! They are also great for heating up in a container and enjoying for lunch all week long because, yum.

I like these because they are a healthier option and gluten-free without sacrificing flavor. You can also customize them to your liking: for garnishing and topping, you can choose whatever you want and adjust to your taste, which we love. Preparing this dish took me around an hour, but it’s easy because it’s a sheet pan situation.

Ratatouille is a traditional French dish that has been enjoyed for generations. This hearty and flavorful dish is made with vegetables such as eggplant, zucchini, tomatoes, onions, and bell peppers. It originated from the region of Provence and is known for its rustic and comforting flavors. There’s this misconception that ratatouille is a fancy vegetable dish plated with the vegetables thinly sliced and layered on top of each other, but the authentic version is a humble stew! I made it in culinary school recently and was surprised by the simplicity and flavor. It was also nothing like the one from the movie!

In recent years, chefs and home cooks alike have been putting their own spin on the classic ratatouille recipe. My twist is this Ratatouille-Inspired Orzo Salad. This recipe combines roasted vegetables with orzo pasta, basil and red pepper hummus instead of a red pepper sauce, creating a light and fresh dish that is perfect for a summer meal or meal prep.

To make this salad, start by roasting a mix of diced eggplant, summer squash, zucchini, red and yellow bell peppers, and cherry tomatoes with olive oil, salt, and pepper. While the vegetables are roasting, cook the orzo according to the package instructions. Once both the vegetables and orzo are cooked, combine them in a large bowl with minced shallots, sliced basil, and a red pepper hummus dressing made with tahini, lemon juice, garlic, and paprika.

This Ratatouille-Inspired Orzo Salad is great for meal prep because it can be made ahead of time and stored in the refrigerator for up to five days. You can also customize the recipe to your liking by swapping out the vegetables for any seasonal favorites, such as butternut squash, Brussels sprouts, or sweet potatoes. If you need to make the dish gluten-free, simply substitute the orzo with a gluten-free pasta or rice. I also love how this is a vegan recipe!! Of course, you can add the dairy (goat cheese or feta would be delicious here.)

We were just in Japan and ate allll the delicious foods, which I can’t wait to share with you. One of our favorite practices that we discovered is the bento box culture. When riding on the train for long periods of time, it’s pretty normal to grab a bento box at a stand in the train station and enjoy it while you’re on there. There are tons of options, but Sebastian and I got hooked on a tonktasu bento box. (Tonkatsu is pork, by the way.) The tonkatsu was served with rice that was topped with black sesame seeds and a pickled plum, and there was spicy mustard on the side along with Japanese BBQ sauce drizzled on top. It was so simple and perfect. And honestly, I craved it the minute we go home! So, that’s why I wanted to make this.

The other day, I was craving Chinese food. Buuuuut I wanted something a little healthier than the cornstarch coated and fried chicken nubs that usually go into sweet and sour chicken. Soooo alas, this recipe was born! I’m not going to lie to you, when I was making this, I didn’t think it would be THIS good. Like yes, I thought it would be delicious. But I didn’t realize how much of a WOW dish this would be. It’s really the perfect dinner for an easy meal when you’re craving takeout vibes but want to get some omega-3’s up in here.

If salmon isn’t your jam, you can of course make this with any other protein of your choice. My fave suggestions? Cubed chicken breast, tofu or shrimp.

You know, I love poke but *damn* it’s pricy! And not gonna lie…I do get nervous about where people are sourcing their fish from these days. So, I decided let’s make poke at home but with the good ol’ shrimp. For this bowl, we cook our shrimp and then toss it in a delicious spicy mayo. It’s then paired with edamame, cucumber, mango, avocado, scallions and of course, some sushi rice. I love this for meal prep — prep all the ingredients ahead of time and assemble. The shrimp will keep for up to 2 days in the fridge. It takes a a few minutes to cook the shrimp, so I recommend prepping everything else then just making that fresh right before serving, but to each his own! Enjoy!

The secret to restaurant quality mushroom risotto? Make your own mushroom broth using dried mushrooms! You can simply add these to water with mirepoix and let it simmer for 30 minutes-1 hour to make your own mushroom broth. OR, you can take a shortcut like I did and just pop the mushrooms into some pre-made vegetable stock and let it simmer for 30 minutes to infuse. Either way, you’re going to take your risotto to the next level.

This is one of my favorite pasta recipes for fall. It’s creamy, it’s nutty, there’s squash involved and there’s also some healthy, earthy rainbow chard stems and leaves in here to round out flavor and provide us some nutrients. This dish is a lot of fun and you can make it ahead of time similarly to a casserole, then just top with breadcrumbs and cheese and bake until it’s warm and golden brown on top before serving.

This is a great weeknight meal, potluck contribution or even a fun Thanksgiving side. I hope you enjoy it as much as I do!

If you can’t find rainbow chard, kale works great too. Just use the stems in the beginning, then add the chopped leaves at the end.

This soup recipe is simple, but POPPING OFF with flavor. We have the smoky, spicy chorizo with the salty, creamy gouda and the nutty, sweet pumpkin. I also added aromatics and a little cream for mouthfeel. I love the simplicity of this recipe and the complexity of flavor. If you have an immersion blender, that works here. But I always love throwing soups in my standing blender, since the blade is so much more powerful and it makes the soup extra creamy.

I used pumpkin purƩe in this recipe, but you can absolutely use acorn or butternut squash. If you do, just cube it and let it simmer in the broth until tender (not just fork tender, but falling apart on the fork.) This should take 20-30 minutes.

If you’ve never had gnudi, today is your day. Gnudi is… quite honestly… a very appropriate name for these fluffy ricotta dumplings. They are a sexy version of gnocchi. They are like the food equivalent of sending nudes. Curvy, sexy, steamy…WOO! I love gnudi can you tell?!?! And dare I say gnudi is even easier to make than gnocchi!??? You don’t have to boil potatoes, you just add some ricotta to some beautiful pizza flour (plus seasonings,) mix it up  and live your truth.

The gnudi is so delicate, I highly recommend just pouring whatever sauce you decide to make right on top. This creamy shallot and artichoke sauce is my pride and joy, but if you want something simple, go with brown butter sage. You can’t go wrong with that! Enjoy this delicious recipe!
