There’s no doubt, carbonara is a classic. I have a recipe for a classic, basic carbonara (made with spaghetti, the authentic choice,) but this recipe has a vibrant spin. To brighten this up for spring time, I decided to add some sweet peas, sliced asparagus and fresh sweet basil. YUM. I also only used egg yolks for this sauce to keep it silky, luscious and less risky. I know there’s a whole thing with carbonara freaking people out due to the raw whole eggs, so I thought this was the move. Also, with the egg shortage, at least you can still get an egg white omelet for breakfast even when you’re using all these egg yolks.

We were just in Japan and ate allll the delicious foods, which I can’t wait to share with you. One of our favorite practices that we discovered is the bento box culture. When riding on the train for long periods of time, it’s pretty normal to grab a bento box at a stand in the train station and enjoy it while you’re on there. There are tons of options, but Sebastian and I got hooked on a tonktasu bento box. (Tonkatsu is pork, by the way.) The tonkatsu was served with rice that was topped with black sesame seeds and a pickled plum, and there was spicy mustard on the side along with Japanese BBQ sauce drizzled on top. It was so simple and perfect. And honestly, I craved it the minute we go home! So, that’s why I wanted to make this.

The other day, I was craving Chinese food. Buuuuut I wanted something a little healthier than the cornstarch coated and fried chicken nubs that usually go into sweet and sour chicken. Soooo alas, this recipe was born! I’m not going to lie to you, when I was making this, I didn’t think it would be THIS good. Like yes, I thought it would be delicious. But I didn’t realize how much of a WOW dish this would be. It’s really the perfect dinner for an easy meal when you’re craving takeout vibes but want to get some omega-3’s up in here.

If salmon isn’t your jam, you can of course make this with any other protein of your choice. My fave suggestions? Cubed chicken breast, tofu or shrimp.

Honest to god, cream of broccoli soup slaps. It’s slightly earthy, sweet, creamy, aromatic, savory and also…its GOOD FOR YOU. I don’t know if you knew this but traditional cream of broccoli soup is not gluten-free due to using a roux (flour/butter) or veloute sauce (which starts with a roux) in the beginning of the cooking process for thickening process. For this recipe, I created a roux with gluten-free all purpose flour and I still used butter because butter is delicious. However, you can use the same weight of olive oil and still get thickening power from the flour.

Don’t have gluten-free flour? Use regular if you aren’t allergic! Or, you can use cassava flour, cornstarch or potato starch. If you use starch, use about 1 1/2 tsp and 2 1/2 tsp water. Make a slurry and add it (this reduces starchy/gummy clumps.)

Need a fun and satisfying side dish for Friendsgiving or Thanksgiving? I gotchu my kings and queens.

I initially tested this with brown butter int he filling, but I’ve learned that brown butter is 10000x more potent when it’s drizzled as a finishing touch instead of incorporated into a filing. And yes, you can absolutely make this traditional lasagna style. I just think roll ups are so cute and fun!! You must use a baking dish that is tall enough to support the noodles. If you don’t, they will fall over and flop. If you don’t have one, I recommend just making this a traditional lasagna 🙂 ENJOY.

When we were in Copenhagen, I experienced the most delicious schnitzel of my life. It was a classic pork schnitzel pounded thin and fried until crispy, and on top was a beautiful serving of butter with capers, shallots and garlic. The simplicity of it all was just outstanding and I learned that schnitzel (and it’s chicken counterpart) doesn’t need much. I knew I wanted to make my own schnitzel dish with a unique spin, but my own twist on it didn’t come to me until I was at the Mediterranean Bar at Whole Foods. If you don’t know what that is – the Mediterranean bar is where they keep all the olives and pickly things so you can serve yourself.

Anyway, at this Mediterranean bar, I found Peruvian sweety drop peppers (which are the size of caperberries with the flavor of a sweet pepper.) I also am familiar with Peppadew peppers, which are sweet pickled peppers. So, I thought, this is it. I must make a butter with these, garlic, herbs and lime. Then this recipe was born! But don’t worry, if you can’t find Peruvian sweety drop peppers, jarred pimentos, Peppadew peppers or just fresh sweet red peppers also work great here. I hope you enjoy this recipe as much as I do!

This is one of my favorite pasta recipes for fall. It’s creamy, it’s nutty, there’s squash involved and there’s also some healthy, earthy rainbow chard stems and leaves in here to round out flavor and provide us some nutrients. This dish is a lot of fun and you can make it ahead of time similarly to a casserole, then just top with breadcrumbs and cheese and bake until it’s warm and golden brown on top before serving.

This is a great weeknight meal, potluck contribution or even a fun Thanksgiving side. I hope you enjoy it as much as I do!

If you can’t find rainbow chard, kale works great too. Just use the stems in the beginning, then add the chopped leaves at the end.

This soup recipe is simple, but POPPING OFF with flavor. We have the smoky, spicy chorizo with the salty, creamy gouda and the nutty, sweet pumpkin. I also added aromatics and a little cream for mouthfeel. I love the simplicity of this recipe and the complexity of flavor. If you have an immersion blender, that works here. But I always love throwing soups in my standing blender, since the blade is so much more powerful and it makes the soup extra creamy.

I used pumpkin purée in this recipe, but you can absolutely use acorn or butternut squash. If you do, just cube it and let it simmer in the broth until tender (not just fork tender, but falling apart on the fork.) This should take 20-30 minutes.

The perfect meal prep lunch doesn’t exi-…….

No seriously, it does. And it’s THIS. I prepared this bowl with pork tenderloin, but I want you to know that you can prepare it with any protein of your choice. It works beautifully with chicken, tofu or shrimp.

If you like to meal prep, here’s a few ways to make this ahead!

Meal prep friends, you can marinate the meat overnight OR you can prepare it ahead of time. Reserve the sauce in a separate bowl and keep the meat in a sealed container. To meal prep this salad, you can slice the slaw ingredients and combine them ahead of time. You can also prepare the dressing up to a week ahead and keep it in a jar in the fridge. Finally, make the rice ahead of time and store in the fridge. This is perfect for meal prep and assembling!

Something else to note is that you can make this gluten-free by using Tamari and a certified gluten-free rice in the bowl. All in (including marinating time) this takes about 45 minutes to make, but I still think of it as a 30 minute meal in terms of cook time.

I recently was reminiscing on that viral 2021 baked feta pasta and thought to myself…wait…what if we changed things up and did it with marinara sauce and mascarpone. And better yet, what if we just throw the orzo in and it cooks IN the sauce?!?! Well…I was actually shocked to my core when I tried this and it worked. Huge fan of this recipe and I hope you enjoy it too. And if you’re the type of cynical soul who’s going to say “well why wouldn’t you just cook the orzo before,” please know that I *obviously* know you can do that. The sarcastic commentary doesn’t add any value to the recipe.  I just wanted to show a new method to the madness. OK?! 🙂
