Buffalo Chicken Dip Bites
Am I the only person who looks forward to the Super Bowl more than I look forward to Valentines Day? This isn’t because I love football. I love the Super Bowl because I love football…. food. Cheese….meat….buffalo sauce on everything….more cheese…dips….fried things…. ahhhhhhh!!!! Sometimes (most of the time) I don’t even watch the Super Bowl! I will just watch whatever I want and enjoy football food because I know that’s what everyone else is doing. I feel like I’m part of this delicious food community on Super Bowl Sunday. Sure, maybe I’m weird, but we all are so don’t @ me!
There’s no question that Buffalo chicken dip is a quintessential Super Bowl food. It’s also just a damn good weekend snack for those cozy, lazy days in. But, in the spirit of the big game coming up, I had a buffalo chicken themed week and I’ve got some spicy, sexy recipes comin’ for you.
You can go two ways with this recipe. You can make it into a dip, or you can wrap the buffalo chicken dip in crescent roll dough and make buffalo dip *~bites~*. Regardless, just make it. OK?

Enough chit chat, let’s get to business.

8oz. cream cheese, softened | |
1/2cup buffalo sauce | |
1/3cup blue cheese | |
1cup shredded cheddar cheese | |
1/2cup finely chopped celery | |
1/3cup finely chopped scallions | |
1 1/2cups shredded chicken | |
2packs crescent roll dough |

Directions
Combine the cream cheese, 1/3 cup buffalo sauce, blue cheese, shredded cheddar cheese, celery, scallions and chicken in a bowl. (Basically combine everything except the crescent roll dough in a bowl.) Mix together with a large spoon or spatula until fully combined and there are no clumps of cream cheese. Set aside.
Unwrap the crescent roll dough and place each triangle onto a sheet pan. Take the long, skinny end of the triangle and fold it up towards the straight edge of the triangle, which should be directly across from it. Once the far point of the skinny triangle is touching the straight edge, press the dough down to combine with the underlying layer of dough. You now should have a square-like shape of dough. Scoop about 1 1/2 tbsp of filling into the center of the dough, making sure to leave at least 1/4 inch of a border around the filling.
Pull one set of opposite corners towards each other and cinch above where the filling is sitting. Repeat this with the other set of opposite corners, meeting in the middle, on top of the other seam. The filling should be almost fully incased at this point. Gather any loose ends towards the middle seam and cinch fully with your finger tips until the ball is fully closed. Repeat with all of the balls. Place them seam side down onto a sheet pan.
Brush each ball with buffalo sauce and bake according to the crescent roll instructions, or air fry for 8 minutes at 375 degrees F. Serve with chopped scallions and blue cheese dressing and enjoy!
Notes
For the shredded chicken, I just got those super cheap frozen chicken tenders from the grocery store and boiled them in salted water until fully cooked. You can boil a chicken breast, or 3-4 chicken tenders until the internal temperature is 165 degrees. Remove it from the heat and then shred with 2 forks or with your hands (if its cool enough!)
